A simple meal tonight, because I have just finished work and I’m tired. My favourite red wine, Rioja, has been superceded by my favourite white, Chablis.

Fresh herbs - garlic, ginger, coriander, cumin powder, turmeric. Green chillies of course, to taste.

In a little oil I fry the turmeric, garlic, ginger and cumin (heavely smell around the house)

Add dried red lentils. ‘Turn’ over a low heat.

Add a bit of water (two glasses or so)

Open the chablis, sit down and have a glass.

After half an hour check it, add water (not too much). Back on the low heat. It needs to go for about an hour which is two glasses of wine, give or take.

When the lentils are soft, add the coriander (and chop in the chillies, to taste).

Serve with rice

Hi Mark, Try white Rioja. It’s fabulous.

If you love the red, then the white will surprise you. I don’t know how much it is in the UK and if I tell you how much a nice bottle of red Rioja costs, you’ll be chewing the furniture.

I prefer beer with chilli/spicy foods and buy a gluten-free one, though it costs more.

I don’t eat pulses often, but I do enjoy chickpeas and I’m quite good at bhajis now.
