I am having problems standing to wash dishes and was thinking a perching stool would be great.
But I couldn’t sit with my knees under the sink, because the cabinet under the sink is in the way. Will it still be possible to use a perching stool in this situation?

It might because you’re perched rather than fully seated. Ask your GP or MS nurse, if you have one, for a referral to the Community Occupational Therapy team, they should be able to assess, advise and supply one
I find a saddle stool works pretty well and the wheels help you to scoot about a bit.
