Following on from the different threads about losing weight and different diets that people follow Is anyone interested in swapping recipes :?: I had some lovely Carrot & Coriander soup today which is very quick and easy to make Here’s the recipe Carrot & Coriander Soup Ingredients • 1 tbsp vegetable oil [I use Rice Bran oil, it is very light and healthy] • 1 onion , chopped • 1 tsp ground coriander • 1 potato , peeled and chopped • 450g carrots , peeled and chopped • 1.2l vegetable or chicken stock • handful fresh coriander (about ½ a supermarket packet) Serves 4 1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender. 2. Tip into food processor with the fresh coriander, then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve. Or use a stick blender and blend in the saucepan. 3. Chop the fresh coriander and sprinkle on the soup just before serving. Anyone got any quick and easy recipes that they would like share :?:
Hi i often make smoothies, frozen fruit, i like forest fruits low fat yogurt any flavor, 1 banana, orange juice and a sqeeze of honey, wizz with electric hand held or similar thats it cool tastie and healthy, keeps you cool too :lol: julsiexx

Hiya I often make carrot & coriander soup, I made the recipe up but it seem to be pretty much the same as this one. I made tomato soup yesterday, as a way of using up the big crop of tomatoes we’d grown. Again I sort of made it up but I did get a tip from the internet too. Recipe for Cream of tomato soup 1 onion tomatoes (as many as you like) 1 veg stock cube tomato puree garlic puree teaspoon of bicarbinate of soda milk Sugar to taste salt & pepper Fry the onion in a little oil (I used olive) cut the tomatoes into 1/4s and add them to the onions Let this cook down for a bit till the tomatoes fall apart Add the crumbled stock cube, good squeeze of the purees (be carefull not to use too much garlic) Give it all a good mix, put the lid on and cook a bit longer. Once it’s well cooked down, blend the contents of the pan (I did it in the food processor but a hand blender will do just as good a job). Once blended seive the mixture, this gets rid of the skin and the seed/pips from the tomatoes. Mix the bicarb in a little milk, add this to the soup, it will froth up but give it a stir and it’ll be fine (this was the tip from the internet, it helps take the slightly sour taste from the tomatoes and helps when adding the milk, so it won’t split). Add more milk, probably about 1/2 a cup, salt & pepper and if needed a little sugar. I’m sure you could make it with cream instead of milk, but it tasted creamy with just milk. My partner loved it and couldn’t believe I’d made it myself! Sue x
