Chips.

Anyone watch Nigella Lawson’s Nigellisimo programme - where she made ‘chips’. My husband [Mary Berry] watches all of the cooking programmes - usually the baking. Nigella’s series is ‘kitchen porn’ - Well according to my OH she made lovely crispy chips by cutting potatoes [ without peeling them] into chips - can be made quite big. Then she put them into ‘COLD OIL’ and cooked them for about 10mins - then added garlic/rosemary/sage/ chilli flakes to the chips and carried on deep frying them.

So - l looked the recipe up on line. The Guardian have some very entertaining reviews of Nigella. Last night l tried it out - cut the potatoes up -dried them on a teatowel and lowered them into COLD Sunflower oil. Added the garlic and herbs - and in about 16mins l had golden and very crispy chips- Crispy on the outside and soft in the middle. Well it works - it was a great success and l shall be trying it again.

Thanks for that; unfortunately I don’t trust myself Deep Fat Frying but brought a phillips fat free fryer; chips come out golden and crispy all the time; brilliant.

Hi F, I did see it and they looked lovely. Like George, I’m a bit worried about deep fat frying and now use oven chips… but I did think Nigella’s looked scrummy! She’s a great cook.

l usually do oven chips - as l have never been successful doing them in a deepfatfryer. l have not excuse now - What amazed me was how crispy they were - and they stayed crispy for ages. Normally, chips are ok straight from the fryer - but soon become soggy.The Nigella way - the oil seemed to drain off them and they were not a bit greasy. Shall try some really big chunky ones now

l have been successful with these. The only problem l can see is you can only make one batch as they have to go into cold oil.

I’ve just seen this post Frances and now I’m having a desperate craving for homemade chips. My husband makes fantastic ones for a treat on someone’s birthday but these sound lovely. I will direct him towards this recipe. Teresa xx

All boys together.Eye Candy is dandy,but I prefer a Picnic.Something a little more spread out and lumpy under the blanket.
