A joint of beef is LOVELY in the slow cooker - also pork, chicken - but not at the same time lol
It’s good for things like rice pudding too Deb … perhaps you need 2 slow cookers huh?

I love my slow cooker & was very impressed to be given a recipe for roast chicken in the slow cooker by a friend the other day (how well they know me!) Not tried the roast chicken recipe yet but he had and assured me it was fab. For those with a sweet tooth you can make rice pudding in the slow cooker too!

Hi, I dont cook…never could and now have a valid excuse.
But i follow an easy eating plan, which needs little cooking.
brekkie…bran flakes, banana and a fresh fig
lunch…cooked pasta with ham and salad
tea…jacket spud and chicken with micro wave veg, followed with yog and grapes, kiwi or other fresh fruit.
Easy and soooo delish!

I actually have 3 slow cookers
They are also useful for drinks…I do mulled wine and cider, hot chocolate, punch and hot toddies in mine!
I am going to have to get me a slow cooker, they sound great. Sam x

If there is one thing I know about it’s low fat recipes, having been on a restricted diet now for 12 months (long story), and my favourite thing to do is baking, so for a real treat on the days when you don’t feel great I usually have rustled up a batch of low fat brownies, muffins or fruit teabread. Here’s the teabread recipe, but if any of you want any of the others, would be happy to share them. Sounds long winded but I usually make up a batch of 2 loaves at a time, and it just gets better over time. Have known a loaf to last 3 weeks too! Enjoy
Ingredients.
200g Raisins
200g Sultanas
100g Dried Cranberries
100g Dried/Pitted Dates, chopped
400g Dried Apricots, chopped
8oz Firmly packed, Dark Brown Sugar
Warm Tea of your choice (we recommend using 2 teabags)
2TBSP Marmalade - Orange
1TSP Ground Cinnamon
1 Egg, Large
1LB Self Raising Flour
1/ Firstly, in a large mixing bowl, place all the dried fruit, and the sugar. Cover with just enough warm tea of your choice so that the fruit is completely covered. Cover the bowl with cling film and leave overnight.
2/ The following morning, preheat the oven to Gas Mark 3. Grease and line 2 x 2LB loaf pans with baking parchment or greaseproof paper.
3/ To the fruit, add all the remaining ingredients and mix until thoroughly combined.
4/ Divide the mixture between the 2 loaf pans.
5/ Place in the oven and cook for approx. 1 hour 45mins or until a skewer inserted comes out clean.
6/Leave to stand in the pans for 15 minutes before placing on a wire rack to finish cooling. Serve sliced.
I know the above doesn’t sound simple, but it’s just throwing everything in together, and it is quick to make and you can just fetch it out the cupboard when you want some. Enjoy!
Ooh I used to make something like that too - but just with sultanas, not the other bits. Yummy : )
yeah, I sometimes make it with just a bag of mixed fruit, and an orange tea which comes up just as nice if I am feeling really lazy, but the apricots make it really juicy too. Just tends to be how adventurous I’m feeling at the time. Do love playing about with recipes.
