Probably weighing out more rice and peas.

Can understand how easy it is to gain weight with your sight, and fatigue issues. It’s true meds can add, but unless it’s hunger they make you feel, shouldn’t be gaining stones. Best way forward is plan a way of eating where your happy with the timing, and it’s not all protein, no carbs etc, as your energy levels dictate. There is a lot to have and pick from.
Its down to calorie intake.
A healthy active female should consume about 2,000 calories a day.
I am over 50 so allow myself about 1600 max.
My weight has stayed good.
The way i did it, chucked out my dinner plate and only eat on a smaller size plate. I am very strict but eat really well, healthy mediterrean diet and always have my low calorie snacks i like. If you like crisps by Teddies, they are gluten free too, about 70calories and very nice lol. Chocolate caramel rice cake thins (purple packet cant remember name of company), good size square about 62 calories. Yummy too. So i still get my crisp and choccie kick.
